Sweet Potato Buns

  • 1 large yam or sweet potato
  • 1 tablespoon olive oil, coconut oil, or clarified butter
  1. Using a very sharp knife cut sweet potato or yam into ¼ inch thick rounds.
  2. Heat oil or butter in a large pan with a lid on medium-high heat.
  3. Once melted and hot, add potato rounds and flip once right away to cover both sides with oil.
  4. Turn down heat to medium and cover for 4 minutes.
  5. Lift the lid and flip over.
  6. Return lid for another 3-4 minutes.
  7. Poke with a fork to see if the thickest piece is tender but not mushy.
  8. Remove to a plate and let cool slightly before building your sandwich.
  9. Makes 3-4 buns
